Halloween Swirl Brownies

I don’t know about you, but nothing screams Halloween like plastic pumpkins and sugar highs.   These are fairly simple brownies that are all dressed up for Halloween.  They are super simple.

Here’s the secret ingredient:

It’s ok, I promise! Brownie mix is pretty awesome, and everyone will love them. Here’s how you liven them up a bit. We’re going to make a bright orange cheesecake swirl for the topping.

Acquire the following:

  • 4 oz (half a package) of cream cheese
  • 1 egg
  • 1 tablespoon of sugar
  • 1/4 teaspoon vanilla
  • orange food coloring (or use your color wheel skills and mix red and yellow food coloring to make orange)

Warm up the cream cheese in the microwave for about 20 seconds, just enough to soften it. Blend it with the rest on the ingredients until it’s smooth.

Grease an 8″ square pan and please for the love of everything, put a parchment square in the bottom. I skipped the parchment step and I regret it. Don’t be like me. Mix a package of brownie mix according to the directions on the box. Spread about 3/4 of the brownie batter in the prepared pan. Then, spoon the orange cheesecake mixture on the top. Drop the rest of the brownie batter in dots over the top. Take a butter knife or toothpick, and swirl the colors together.

This looks pretty festive, so you can stop here if you want and bake them (once again, according to the directions on your brownie mix). However, I am clinically incapable of leaving well enough alone, so I broke out the Halloween sprinkles.

halloween brownie batter with sprinklesEverything is better with sprinkles! Now bake them, let the chill, and if you were smart and used parchment, you should be able to unmold the entire thing and then slice it into beautiful, even squares with a sharp knife.

I did the best I could with my stuck brownies, but they taste just as good!
