Patriotic Chocolate Dipped Shortbread Cookies

Happy 4th of July! I know I shared a patriotic layer cake with you last week to help get you in the spirit, but I couldn’t let the real holiday go by without some extra red, white, and blue treats. These are just a simple, all-butter, shortbread that I half dipped in dark chocolate and covered in red, white, and blue sprinkles. For bonus points, you can serve these with some fancy Fourth of July milk! Just put a little bit of corn syrup around the rim of the glass then dip it into red, white, and blue non-pareils. It’s just like making a margarita! This is fun to do any time you serve milk and cookies at a party. You can find non-pareils in any color combo to fit your theme, or just use the classic rainbow mix.

Shortbread cookies are very easy to make and have very few ingredients. Even though the dough is made with butter, the dough is very easy to handle and does not even need to be chilled before rolling! Here is my recipe.

All-Butter Shortbread Cookies

  • 1 cup (that’s 2 sticks) salted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/6 cup powdered sugar
  • 2 1/2 cups all purpose flour

Preheat your oven to 325F and line your baking sheets with parchment or non-stick mats. Cream the butter and all of the sugars together until light. Add the flour and mix until the dough comes together. Roll the dough out to 1/4 inch thick. Rolling the dough between two sheets of parchment paper will prevent sticking and keep everything tidy. Cut the dough into hearts (or any small shape, I wouldn’t go over 2 inches diameter, these cookies are rich!) and bake for 17 minutes. Let cool on wire racks.

To decorate, combine 1 cup of dark chocolate chips (or milk chocolate if you prefer) and 1 Tablespoon of vegetable shortening in a  glass measuring cup. Microwave at 30 second intervals and stir between each. Once the chocolate is just melted, begin dipping your cookies. Place each freshly dipped cookie onto a pan lined with parchment or a non-stick mat. Cover the melted chocolate with 4th of July sprinkles. Once you have finished decorating all the cookies. Place the trays in the refrigerator to set the chocolate.

Once the chocolate sets, you’re ready to get your fancy glasses of milk and serve them! Although the milk glasses are very cute, these cookies are also delicious dipped into cups of hot tea or coffee. If you’re fond of the little packs of shortbread cookies they sell in the coffee shop, these taste exactly the same. Just skip the chocolate dipping.
